BBQ Curried Cod Skewers

Spice up your BBQ with this easy to make, healthy fish recipe.

Ingredients:

4 Cod fillets chopped into chunks
1 tbsp medium curry powder
1 tsp garam masala
1 clove garlic grated
1 tsp lemon juice
1 tbsp 0% fat greek yoghurt
1 medium sized courgette sliced
1 red onion sliced
1 red pepper chopped into chunks

8 water soaked wooden skewer or metal ones

 

Recipe (serves 4)

1.

Add the cod chunks, curry powder, garam masala, garlic, lemon juice and yoghurt too a bowl and stir until the ingredients are combined.

Cover the bowl and place in the fridge, allowing the cod to marinate for 3-4 hours.

Evenly distribute the fish, courgette, onions and peppers across the eight skewers.

Add to your BBQ, turning frequently until the fish is flakey but not dry. Enjoy!
