Greek night for two on the BBQ

Bring Greece to your back garden with these classic dishes.

1.Pork Souvlaki

Ingredients:

4 pork medallions
3 cloves of garlic, grated
1 tbsp oregano
1 1/2 tbsp paprika
1 tbsp lemon juice
1 tsp cumin
Salt to taste

4 Metal or bamboo skewers (for bamboo skewers, leave to soak in water before use, to stop them from burning on the BBQ)

Method:

Slice the pork into chunks and add to a bowl

Mix the grated garlic, oregano, paprika, lemon juice, cumin and salt together in a jug and evenly pour over the pork

Cover the bowl and place in the fridge, allowing the pork to marinate for 3-4 hours

Equally distribute the pork across the four skewers making sure there are no gaps between each piece, add the remaining marinade to a jug

Grill on the BBQ, evenly pouring over the remaining marinade and frequently turn until the pork is cooked through

 

2.Gluten free flatbreads

Ingredients:

100g 0% fat Greek yoghurt
125g gluten free self raising flour
1 tbsp tepid water

Method:

Add 100g of the flour to a large bowl

Add the yoghurt and water together in a jug and mix

Pour the mix into the bowl of flour and gently combine the ingredients together. Knead until a soft dough is formed

Half the dough and roll each piece into a ball

Sprinkle the remaining flour onto a clean surface and roll each ball out individually in to an oval shape, flatten to around 5mm thickness

Place both flatbreads back in the bowl, cover and proof for around 1-2 hours

Grill each side on the BBQ until crisp and they’re ready to eat

 

3.Greek Salad

Ingredients:

1/5 cucumber sliced, rind peeled (optional)
4 salad tomatoes, cut into wedges
1 small red onion, sliced into thin strips
1 block of feta, cubed
20 pitted olives, cut in half
1 tsp lemon juice
2 tsp oregano
2 tbsp Greek extra virgin olive oil

Method:

Add all the ingredients into a bowl and stir until mixed.

Place in the fridge for a minimum of 2 hours and it’s ready to serve!

 

4.Tzatziki

Ingredients:

1/3 cucumber grated
2 garlic cloves grated
1 1/2 tsp mint
100g Greek yoghurt
1 tsp lemon juice

Method:

Add all the ingredients into a bowl and stir until mixed.

Serve straight away or keep in fridge until your BBQ is ready.
