Spooky but simple, these monster burgers are a great treat for Halloween and the delicious beef patties are also perfect for grilling on the BBQ – if you’re embracing the cold!
500g lean beef mince
1/2 red onion finely chopped
1 OXO cube, crumbled
Salt & pepper to taste
4 little gem lettuce leaves (optional)
4 gherkin slices
4 slices Mexican cheddar (or sliced cheese of your choice)
4 tbsps ketchup
4 burger buns halved
Recipe (serves 4)
Add the beef mince, onion, crumbled OXO cube, salt, pepper and egg to a large bowl and mix together until the ingredients are combined.
Split the mixture into 4 equal balls and flatten into patties with the palm of you hand.
Lay out each cheese slice on a clean work surface. Using a sharp knife, cut triangles from one side of each cheese slice to make fangs.
Grill the patties on each side until cooked through
To construct a monster burger first place a lettuce leaf over the bottom half of the bun, top this with the beef patty. Place the gherkin a quarter of the way over the patty so it sticks out of the burger and add the cheese slice on top of this. Spoon a generous amount of ketchup on to the inside of the other burger bun half and place on top of the cheese, squishing it down slightly so it runs on to the “teeth”. Top the burger off by adding two jalapeño “eyes”. Repeat this to make the other three monsters.
